Lunch Box Series 11: Cinnamon Swirl Bread & Cripsy Chicken Caesar Salad

Welcome back to another edition of our Lunch Box Series, designed to make school lunches easier, tastier, and more exciting. This week, we’re bringing you two delicious (and meal prep friendly) recipes for teens and high schoolers, designed to keep them full and satisfied!

Cinnamon Swirl Bread

There’s nothing quite like the comforting aroma of Cinnamon Swirl Bread. Imagine walking to your local bakery and smelling the fresh, warm cinnamon scrolls - because that’s what your house will smell like! 

This soft, lightly spiced bread with a delicious cinnamon-sugar swirl makes for the perfect morning treat or afternoon pick-me-up.

Soft on the inside and crunchy on the outside, your teenager will be requesting this Cinnamon Swirl Bread every week for school! 


practical everyday essentials


Ingredients: 

  • ¼ cup brown sugar 

  • 2 tsp cinnamon 

  • ⅓ cup melted butter 

  • ½ cup plain Greek yoghurt 

  • 1 large egg

  • 1 tbsp vanilla extract 

  • ½ cup honey 

  • ⅔ cup milk of choice 

  • 2 cups of plain flour 

  • 1 tsp baking soda 

  • 1/2 tsp salt 

  • ¾ cup white choc chips 


For the crunch topping: 

  • ½ cup brown sugar 

  • 1 tbsp pain flour 

  • 1 tbsp cinnamon 

  • 2 tbsp melted butter

Method: 

  1. Preheat the oven to 180 degrees. Grease a bread loaf tin and line with baking paper

  2. Combine the sugar and cinnamon to make the cinnamon sugar

  3. In a large bowl,  mix the melted butter, honey, yoghurt, egg, vanilla and milk until well combined

  4. Fold in the flour, baking soda and salt. Add in the white choc chips and stir until just combined

  5. Spoon half the mixture into the prepared tin. Sprinkle with cinnamon sugar, leaving some for the top. 

  6. Spoon over the remaining batter making sure it is evenly distributed. Sprinkle with remaining cinnamon sugar. 

  7. To make the crunch, mix the melted butter with the sugar, flour and cinnamon until thick and pasty. Spoon this over the loaf in random dollops.

  8. Bake for 50-60 minutes or until the centre is firm. 

  9. Enjoy warm or cool.

Crispy Chicken Caesar Salad

Crunchy, crispy, creamy deliciousness in a bowl! Chicken Caesar Salads are an iconic Australian staple (in our humble opinion). Our take on this legendary lunch features flavour-packed golden chicken tenders and a zesty basil mayo dressing. 

Keep your teen full, fuelled and energised to tackle an exam, sport event or to just get through the rest of the school day with this crowd-pleasing salad!

Ingredients:

  • X2 shredded baby cos lettuce 

  • 1 punnet of cherry tomatoes, halved

  • 1 avocado, diced

  • Handful of sprouts or micro herbs 

  • 300g bacon

  • 1 packet of frozen chicken tenders 

  • 1tsp chilli flakes 

  • Cheddar cheese cut into cubes


Dressing: 

  • ½ cup mayo 

  • 3 tbsp basil pesto 

  • ½ lemon squeezed 

  • 2 tsp honey

Method:

  1. Preheat the oven to 180 degrees and line a tray with baking paper

  2. Place the frozen chicken tenders on the prepared tray and bake for 25-30 minutes or until golden brown. You can also bake the tenders in an air fryer if available 

  3. For the salad, shred the lettuce, halve the tomatoes and dice the avo

  4. Heat a teaspoon of oil in a medium fry pan over high heat. Fry the diced bacon until golden and crispy then let cool

  5. Mix dressing ingredients together until combined

  6. Assemble the salad by placing the lettuce in a large bowl. Top with tomatoes, avo, bacon and cheese

  7. Mix through with a serving spoon or tongs. Evenly divide the salad over 4-5 containers. Place the dressing in small separate containers to avoid a soggy salad

  8. Top with the crispy chicken, you can leave the tenders whole or dice them into bite-sized pieces. 

  9. Sprinkle with sprouts or micro herbs of your choosing!

Pack Lunch With Us
