Lunch Box Series 9: Roast Vege Quiches & Lamb Kofta Bowls

Welcome to Lunch Box Series 9, Lunch Lovers! The holiday season is over, and it’s time to get back into the swing of things - early mornings, busy schedules, and, of course, packing work lunches. 

If you’re looking for meal-prep lunch recipes for work, embrace the ease of batch cooking! Instead of scrambling for meals each morning, a little weekend meal prep can set you up for a week of stress-free, delicious lunches.

This week, we’re sharing two batch-friendly work lunch recipes that will keep you fuelled and satisfied: Roast Vegetable Mini Quiches (drool), perfect for grab-and-go bites, and a Lamb Kofta Bowl, packed with protein and flavour. 

Both are easy to prepare in advance, freeing up your morning and setting you up for success. Let’s make back-to-work lunches effortless!

Roast Vege Quiches

Proof that big flavour comes in small packages. Loaded with roasted veggies, fluffy eggs, and a touch of crispy bacon goodness, these Roast Vege Quiches are the perfect grab-and-go option for busy workdays.

Make a batch on Sunday to freeze and you’ll have a delicious, protein-packed snack  ready to roll all week long. Just as tasty hot or cold, because who has the time to reheat? 

Tip: Double the recipe and have quiches for the whole family. Perfect for speedy snacks and in school lunch boxes!

Ingredients: Makes 12

  • 6 bacon rashers 

  • ¼ pumpkin 

  • ¼ sweet potato 

  • ½ red onion

  • 200g rocket 

  • 30g feta 

  • 9 eggs 

  • ¾ cup cooking cream

  • 1 tbsp olive oil

  • Salt & pepper

Method: 

  1. Preheat oven to 180 degrees 

  2. Line a baking tray with parchment paper

  3. Dice pumpkin, sweet potato, red onion, bacon & place on baking tray. Toss in olive oil and salt & pepper

  4. Bake for 40mins or until golden brown

  5. Whisk eggs in a bowl. Add in cooking cream and season to taste

  6. Grease muffin tray with butter and place down a square of baking paper for each muffin to prevent sticking

  7. Place bed of rocket down in the muffin wells

  8. Once roasted, evenly distribute the veg mix over the muffin tray & top with egg mixture 

  9. Sprinkle with crumbled feta & put back into the oven to bake for 20mins or until egg is cooked through

  10. Enjoy with a side of tomato relish!

Lamb Kofta Bowls

Say goodbye to boring lunches and add these Lamb Kofta Bowls to your weekly rotation. Juicy, spiced koftas paired with a crunchy salad and a dollop of fresh tzatziki make for a seriously satisfying meal. 

The best part? They’re perfect for meal prep! Cook up a batch, portion them out, and enjoy a flavour-packed, protein-rich lunch all week long. Easy, delicious, and anything but ordinary - just how we like it!

Tip: To keep your salad looking crisp all week, place the tzatziki in one of our Small Nesting Containers and drizzle when ready.

Ingredients: Makes 12 Kofta

Kofta:

  • 500g lamb mince 

  • 2 tsp paprika 

  • 2 tsp cumin 

  • 1tsp turmeric 

  • ¼ breadcrumbs

  • 1 tbsp coriander chopped

  • 3 minced garlic gloves

  • ½ diced red onion

  • 1 egg

  • Salt & pepper

Salad:

  • 200g spinach 

  • 200g rocket 

  • Handful of chopped mint

  • ½ sliced red onion

  • 1 capsicum

  • 1 cucumber 

  • Punnet of cherry tomatoes

Tzatziki:

  • 200g natural greek yoghurt 

  • ½ cucumber diced finely 

  • Handful of chopped dill 

  • ½ lemon juiced 

  • Salt & pepper

Method:

  1. Combine tzatziki ingredients and put aside in the fridge 

  2. Place kofta ingredients into a bowl and combine with hands

  3. Shape into a small log (a tad longer than a golf ball) 

  4. Heat oil in a fry pan over high heat and cook kofta until golden brown 

  5. To meal prep, place a bed of rocket and spinach across 5 containers

  6. Top with the remaining salad ingredients, kofta & tzatziki (in a separate small container)

  7. Season with a sprinkle of dukkah & sriracha if you like spice!
