Thank you for joining us for another Ela & Earth Lunch Box Series! We hope you’ve been enjoying this edit as much as we’ve loved creating it. The team here at Ela & Earth are self-proclaimed ‘foodies’ and are having (too much) fun making a mess in Judi’s kitchen!

This week, we're preparing a day of work lunches using our Rose Lunch Bucket Bag. The recipes below—Carrot Cake Overnight Oats and Salmon & Fennel Salad—are perfect for weekly meal prep, helping you save some precious time in the mornings.

Carrot Cake Overnight Oats

Okay, hear us out… carrot cake (YUM) but make it a healthy breakfast! This recipe gives you the best of both worlds and even better, you can prepare ahead and enjoy this yummy meal for 4 days. 

These overnight oats are jam packed with nutritious, beneficial ingredients to help you stay full for longer whilst also being great for your gut health. If you have a favourite variation of overnight oats, please share it with us - the options are endless!

Ingredients: Makes 4

  • 2 cups rolled oats
  • 2 tsp cinnamon
  • ½ tsp nutmeg
  • ½ cup grated carrot 
  • 4 tbsp maple syrup
  • 3 cups almond milk
  • 1 cup vanilla yoghurt
  • 2 tbsp raisins
  • 3 tbsp shredded coconut
  • 3 tbsp walnuts - chopped

For the Topping:

  • 1 cup white choc chips 
  • ½ cup vanilla yoghurt 
  • 1 tbsp walnuts - chopped

Method: 

  1. Mix ingredients together in a large bowl
  2. Once well combined, divide between 4 containers and pop in the fridge (our nesting containers are perfect for this!)
  3. Melt white choc over the stove until smooth 
  4. Slowly spoon the extra yoghurt into the melted choc and fold until combined
  5. Spoon white chocolate mixture over the 4 nesting containers and sprinkle with extra chopped walnuts and coconut. 
  6. Store in the fridge for 4 days.

Salmon & Fennel Salad

Our Indian inspired salad is sure to tickle your taste buds! This refreshing dish combines the rich flavours of smoked salmon with the crispness of baby cos lettuce and the aromatic notes of fennel. The star of the meal is the creamy Greek yoghurt dressing infused with coriander chutney - we give it 5 stars!

This salad is so easy to chop up, toss and divide over containers for the work week ahead. We recommend keeping the yoghurt dressing separate until you’re ready to eat by taking a spoonful to work with you in a small container.

Ingredients:

  • 200g smoked salmon
  • 2 baby cos lettuce
  • ½ red onion
  • 1 lemon
  • 1 large carrot
  • 1/2 fennel
  • 1 cup greek yoghurt 
  • 1 tbsp coriander chutney
  • Handful of coriander
  • 1 large cucumber
  • Handful of dill

Method:

  1. Rinse lettuce, pat to dry then shred
  2. Dice cucumber
  3. Slice red onion, add squeeze of lemon juice and sit to the side
  4. Chop coriander and dill
  5. Use a peeler to ribbon the carrot
  6. Slice the fennel using a mandolin, add a squeeze of lemon juice 
  7. Mix the coriander chutney into the Greek yoghurt
  8. Assemble salad by adding lettuce, cucumber, fennel, onion, carrot ribbons, coriander and dill to a large salad bowl
  9. Toss the salad and divide over containers for the week. Keep the yoghurt separate until ready to serve (our small nesting container is great for transporting sauces and condiments)
  10. Crumble the smoked salmon over the containers evenly. Store salads in the fridge for 4-5 days.

Pack Lunch With Us

To pack a day of work lunches, we’ve used our largest nesting container to prep the Carrot Cake Overnight Oats, which is ready to grab straight from the fridge. The salmon and fennel salad is going into the Bento Snack Box as the divider can be removed, making it ideal for salads and larger meals.
