Lunch Box Series 27: Matcha Raspberry & Banana Bread
As the school term edges toward its final stretch and the Christmas countdown quietly begins (hello, Mariah defrosting), there’s no better time to add a little festive fun to the lunch box!
This week’s Lunch Box Series recipe is the perfect bridge between “let’s just get through the term” and “bring on the holidays” - a Matcha, Raspberry & Banana Bread that’s naturally green and red, deliciously soft, and just a little bit special.
It’s a simple, wholesome bake that feels festive without tipping into full candy-cane chaos - ideal for school snacks, weekend treats, or stocking the freezer ahead of holiday madness. Plus, it tucks beautifully into our new Silicone Bento Boxes (no Houdini crumbs, promise).

Matcha Raspberry & Banana Bread

Ingredients:

⅓ cup coconut oil
-
1 ½ cup white chocolate chips

1 cup self raising flour
-
1 cup almond flour
-
½ tsp baking powder
-
¼ cup coconut sugar
-
2 ripe bananas, mashed
-
2 eggs
-
½ cup maple syrup
-
2 tsp matcha powder
-
Punnet raspberries
-
1 tsp vanilla essence

Method:

Preheat the oven to 170 degrees celsius before greasing and lining a bread loaf tin with baking paper.

Melt the coconut oil and half a cup of the white choc chips together until smooth.

In a medium bowl, mix the self-raising flour, almond flour, baking powder and coconut sugar.

In a second medium bowl, mix the mashed ripe bananas, eggs, maple syrup and vanilla essence. Pour the melted coconut oil and white choc chips into this wet mixture.

Add the wet ingredients to the dry and fold through the remaining white choc chips.

Half the batter over two bowls. Add the matcha powder to one of the bowls and combine.

Spoon the batter into the prepared tin, alternating between the two batters to create a marble effect.

Sprinkle two thirds of the raspberries through the tin at random.

Bake in the oven for one hour or until you are able to poke a skewer into the middle and it comes out clean.

To frost, melt additional white chocolate and dust with matcha powder.
