Busy mornings, back-to-back meetings, and that 3pm slump - we’ve all been there! That’s where a little weekend prep can be a game-changer. These two recipes aren’t just quick to make; they’re packed with flavour, full of goodness, and designed to travel well in your lunchware.

Lamington Chia Puddings

This iconic, childhood favourite just got a healthy upgrade! Our Lamington-inspired chia pudding is creamy, chocolatey, and finished with a coconut sprinkle - basically dessert disguised as breakfast!

It’s high in fiber, rich in good fats, and perfect for meal prep. Make a batch on Sunday, and you’ll have grab-and-go portions ready for the week. Bonus? It’s delicious straight from the fridge, so no microwave required.

Ingredients: makes 4

  • 1 cup coconut milk 

  • ½ cup shredded coconut + extra to serve 

  • ¼ cup chia seeds 

  • ⅓ cup honey

  • 2 tbsp cacao powder 

  • 250g raspberries (x2 punnets)

  • 1 cup coconut yoghurt 

  • ½ cup cacao granola clusters

Method

  1. Whisk coconut milk, shredded coconut, chia seeds, honey and 1 tbsp of the cacao powder in a large bowl until well combined. Cover and refrigerate for at least four hours or until thick. Tip: Periodically stir mixture to avoid chia seeds sitting on top 

  2. Reserving 12-14 raspberries, mash remaining in a bowl 

  3. Divide chia mixture over 4 nesting containers and dust with remaining cacao powder

  4. Top with coconut yoghurt, mashed raspberries, and granola clusters. Sprinkle with remaining raspberries and extra shredded coconut

  5. Store in the fridge and enjoy throughout the week!

Falafel Salad Bowl

Say hello to your new work-lunch MVP! This vibrant bowl is packed with plant-based protein, crunchy veggies, and all the Mediterranean goodness your taste buds could ask for. We packed the creamy hummus separately in one of our Set of 3 Containers, so it stays fresh until you’re ready to eat. 

When it’s time for lunch, just drizzle, toss, and dig in! With crispy falafels, tangy feta, and a sprinkle of fresh herbs, it’s a flavor-packed way to power through your afternoon. The best part? Everything can be prepped in advance, so your weekday lunch game is effortless.

Ingredients

  • Frozen falafels 

  • ¼ cup pine nuts

  • 1 tin chickpeas 

  • 200g bag of rocket 

  • 1x cucumber 

  • 1x capsicum 

  • 1x red onion 

  • Punnet of cherry tomatoes 

  • Handful of parsley

  • Handful of coriander

  • ¼ cup feta

  • Hummus 

  • ½ lemon

  • 1 tsp paprika

  • 1 tbsp olive Oil

  • Pita pockets

Method

  1. Preheat oven to 180 degrees. Scatter pine nuts onto a lined baking tray and toast until golden. 

  2. Tip chickpeas into a strainer and rinse with water before leaving to dry. 

  3. Chop rocket roughly. Dice cucumber, capsicum, red onion and halve the cherry tomatoes.Finely chop the coriander and parsley. 

  4. Defrost the frozen falafel balls 

  5. Assemble by placing all salad ingredients into a large bowl and combine. Divide salad over 5 containers. 

  6. Top salad with toasted pine nuts, crumbled feta, chopped herbs and 3-4 falafels. 

  7. In a separate bowl, whisk together the hummus, paprika, lemon juice and olive oil. 

  8. Store hummus in a separate airtight container until ready to eat. Serve with warmed pita pockets.
