Lunch Box Series 13: Easter Rocky Road & Miso Noodle Salad

We’re hopping (pardon the Easter pun) back into the Lunch Box Series with two tasty additions that tick very different boxes! Whether you’re home with the kids on holidays or prepping for your work week in the office, this duo’s got you sorted.

First is our Healthy(ish) Easter Rocky Road - a fun twist on the iconic dessert, packed with trail mix, dark chocolate, and a little Easter magic. It’s a great recipe to get the kids involved with during the school holidays (hello, chocolatey fingers and sticky fun), and makes for a thoughtful homemade gift or afternoon tea treat! 

Next we’ve got a Miso Noodle Salad that’s light, full of flavour, and made for meal prepping. Easily prep over your favourite containers, pop it into your lunch cooler, and thank yourself later when you’re powering through emails with something nourishing and delicious on hand.

Easter Rocky Road

This isn’t your average rocky road - this is our healthy(ish) twist on the classic recipe. It’s loaded with trail mix (hello fibre, healthy fats, and dried fruit), and fuses chewy, crunchy, chocolatey goodness with just enough Easter flair to keep things fun and festive. 

It’s the perfect school holiday activity to keep little hands busy (and chocolate-covered), with spoon-licking strongly encouraged. Bonus points if you wrap up a few pieces for homemade Easter gifts… or just stash the whole lot for yourself - we won’t tell anyone!

Ingredients

  • 1 block of dark cooking chocolate 

  • 1 block of white cooking chocolate 

  • Large bag of trail mix 

  • Generous handful of marshmallows, diced 

  • Generous handful of Turkish Delight, diced 

  • Bag of Cadbury speckled Easter eggs

  • Pinch of salt 


 

Method

  1. Prepare a tray lined with baking paper.

  2. Place the trail mix, chopped marshmallows and turkish delight into a large bowl and combine. 

  3. Melt the block of dark chocolate and half the block of white chocolate over the stove.

  4. Pour the melted chocolate into the dry mixture and fold until all ingredients have been coated.  

  5. Tip the mixture into the prepared tray, pressing down into the tray and corners. 

  6. Place in the fridge to set for 15 minutes. In the meantime, melt the remaining half of white chocolate over the stove. 

  7. Drizzle the melted white chocolate over the rocky road. Sprinkle with sea salt and decorate with speckled Easter eggs (use the white chocolate to stick them in place). 

  8. Place back into the fridge for another 10 minutes before cutting into squares. 

  9. Store in the fridge in an airtight container OR freeze a batch for when you next feel like a treat.

Miso Noodle Salad

Say hello to your new favourite work lunch! This miso noodle salad is light, flavour-packed, and made to power you through the 3pm slump. The best bit? It’s built for batch prep - whisk the dressing straight into the bottom of your containers, then layer with noodles, crisp salad ingredients, and cooked chicken. 

Pop the lids on, stash them in the fridge, and boom - lunch is sorted for the week. It’s fresh, satisfying, and seriously good straight from your lunch bag.

Ingredients: Makes 4

  • 1x bundle of soba noodles

  • 1 large carrot, grated

  • 1 cup edamame 

  • 1 capsicum, chopped

  • Half red cabbage, shredded

  • BBQ chicken, shredded

  • Handful of coriander 

Dressing: Per serve/container 

  • 1 tsp peanut butter 

  • 1tsp miso paste 

  • 1 tbsp soy Sauce 

  • 1 tsp sesame oil

Method:

  1. Cook soba noodles according to the package instructions.

  2. Using 4 air-tight containers, place dressing ingredients into the bottom of each container and whisk to combine.

  3. Divide the cooked noodles over the 4 containers. Using the chopped/shredded vegetables, layer each container and top with the shredded BBQ chicken. 

  4. Garnish with a handful of roughly chopped coriander. 

  5. To serve, add 1 tbsp of hot/warm water and shake! You can eat straight from the container or tip into a bowl.
