Welcome back to the Ela & Earth Lunch Box Series! With the school year winding down and the holidays just around the corner, it’s the perfect time to get creative in the kitchen with your little ones. Baking snacks together is not only a fun holiday activity but also a great way to stock up on delicious, ready-to-go treats for the busy festive season.
This week, we’re sharing two kid-approved, lunchbox-friendly recipes: White Choc Raspberry Muffins and Healthy Bliss Balls. These sweet treats are simple to make and perfect to pack to keep everyone satisfied on long family road-trips or adventurous school holiday activities! Then, when school begins again, simply add them into your weekly lunch box rotation.
White Choc Raspberry Muffins
We like to call these the ‘Crowd Pleaser’ and for good reason! These White Choc Raspberry Muffins are soft, sweet, and bursting with warm raspberry goodness. With pockets of melty white chocolate in every bite, they’re the kind of snack that disappears as quickly as you bake them. Drooling? Us too!
Ingredients:
- 3 cups plain flour
- 2 tsp baking powder
- ½ tsp bicarb soda
- ¼ tsp salt
- 2 large eggs
- ¾ cup caster sugar
- 120g melted butter
- 1 tsp vanilla extract
- 2 cups of milk
- 2 cups frozen raspberries
- ¾ cup white choc chip
Method:
- Preheat the oven to 180 degrees celsius
- Line a muffin tray with individual liners or butter/spray oil if you don’t have liners
- In a large bowl combine flour, baking powder, bicarb soda and salt. Mix together, then create a well in the centre of the ingredients
- In a separate bowl, whisk the eggs and sugar until well combined. Add the melted butter and vanilla extract and whisk. Add the milk and mix together for another minute
- Pour the liquid mixture into the well of the dry ingredients and fold together. Add the frozen raspberries and white chocolate and fold without crushing the berries
- Evenly divide the batter between muffin trays. Bake for 35-40 mins
Bliss Balls
Packed with goodness and a touch of natural sweetness, our healthy Bliss Balls are the ultimate grab-and-go snack. Perfect for busy mornings, school lunchboxes, or an afternoon energy boost, these little bites are as easy to make as they are to eat. The addition of orange zest is like indulging in a jaffa but without the guilt - WIN!
Ingredients:
- 29-30 pitted medjool dates
- 1 ½ cup roasted cashews
- ½ cup coconut flakes
- ¼ cacao powder
- ¼ hemp seeds
- 2 tbsp chia seeds
- 2 tsp maca powder
- 1 tbsp orange zest
- 1tbsp orange juice
- 1 tbsp coconut oil
- ¼ tsp sea salt
- Block of dark cooking chocolate
Method:
- Prepare a baking tray lined with baking paper
- Add all ingredients except chocolate to a food processor and pulse until combined and mixture holds together easily
- Roll into golf ball sized balls and place on the tray
- Melt the chocolate, using two forks dip the balls in chocolate, draining the excess through the forks and place back on the tray
- For garnishings, we used orange zest, dried edible florals and desiccated coconut
- Place the balls in the fridge for the chocolate to set
- Store in an airtight container in the fridge (and enjoy) for up to a week
Pack Lunch With Us
This week, we’re packing a full day of delicious snacks to keep you and your mini fuelled these holidays! We’ve used two of our 800ml Bento Snack Boxes with the divider in place - it’s removable, giving you flexibility depending on what you’re packing.
For a mid-morning or afternoon snack, we’ve included a White Choc Raspberry Muffin and some fresh berries in one half of the Bento Snack Box, with carrot sticks and hummus in the other. To keep the hummus fresh and mess-free, we used the smallest of our Nesting Containers for separation.
For the main lunch, we’ve prepared a quick and tasty chicken and salad wrap for one side of the Snack Bento Box, while our Bliss Balls fill the other half - perfect for an energy boost during busy holiday outings.
