
Lunch Box Series 16: Our Top 3 Favourite Lunchbox Snacks
We’re deep in the school term, and if your lunchbox inspiration is running on empty - trust us, we get it, Lunch Lovers. That mid-term slump hits hard but don’t worry, we’ve got just the thing to shake it up!
We’ve rounded up a collection of our favourite lunchbox winners to lift spirits (and tastebuds) alike. Whether you’re batch-prepping for the week or scrambling for something beyond crackers and cut-up fruit, these tried-and-true recipes will become your new go-to rotation.
Let’s add some joy (and plenty of flavour) back to the midday munch!

White Choc Raspberry Muffins
We call these our Lunch Box Legends - because honestly, they never stick around for long. Soft, sweet, and studded with juicy raspberries and creamy white chocolate, these muffins strike the perfect balance between a treat and a snack.
Perfect for school lunch boxes, pop one in (or, let’s be real, two) and watch them vanish. Fast!
Ingredients:

3 cups plain flour
-
2 tsp baking powder
-
½ tsp bicarb soda
-
¼ tsp salt
-
2 large eggs
-
¾ cup caster sugar
-
120g melted butter
-
1 tsp vanilla extract
-
2 cups of milk
-
2 cups frozen raspberries
-
¾ cup white choc chip

Method:
-
Preheat the oven to 180 degrees celsius
-
Line a muffin tray with individual liners or butter/spray oil if you don’t have liners

In a large bowl combine flour, baking powder, bicarb soda and salt. Mix together, then create a well in the centre of the ingredients

In a separate bowl, whisk the eggs and sugar until well combined. Add the melted butter and vanilla extract and whisk. Add the milk and mix together for another minute

Pour the liquid mixture into the well of the dry ingredients and fold together. Add the frozen raspberries and white chocolate and fold without crushing the berries

Evenly divide the batter between muffin trays. Bake for 35-40 mins!

BBQ Trail Mix
If you love a crunchy, salty, smoky snack, this one’s for you! Our BBQ Trail Mix is bold, addictive, and dangerously moreish - basically the kind of thing you’ll want to keep stashed in your bag at all times.
It’s a hit with kids, grown-ups, and anyone hovering near the snack table. Ideal for lunch boxes, weekend school sports, movie nights or, let’s be honest… anytime!
Tip: Mix up a big batch (or two) on Sunday for the whole family to enjoy, getting you through the school and work week, one handful at a time.
Ingredients:

3 cups salted mini pretzels
-
1 packet ‘In a Biskit’ Drumstix crackers
-
2 cups chex cereal (we used broken up rice cakes)

6 tbsp melted butter
-
1 tbsp onion powder
-
1 tbsp smoked paprika
-
2 tsp chilli powder
-
2 tsp garlic powder
-
1 tsp mixed herbs
-
½ tsp brown sugar
-
1tsp each of salt & black pepper

Method:

Pre-heat oven to 180 degrees
-
Prepare a lined baking tray
-
Melt the butter in a large microwave safe bowl
-
Add the spices to the butter and combine
-
Add the pretzels, drumstix and chex to the bowl and coat in the spiced butter
-
Spread on the prepared baking tray and cook in the oven until golden brown and crispy

Cinnamon Swirl Bread
Proceed with caution: this cinnamon bread will make your kitchen smell like a bakery (the very good kind)! With its golden crust, soft cinnamon-sugar swirl, and just the right amount of spice, this loaf is the epitome of comfort snack.
Pop it into lunch boxes for a sweet, mid-week surprise or serve it warm as an after-school snack - either way, it won’t last long. Teenager-approved and totally irresistible!
Tip: Batch prep friendly - slice and freeze for easy grab-and-go snacks all week long!
Ingredients:

¼ cup brown sugar

2 tsp cinnamon
-
⅓ cup melted butter
-
½ cup plain Greek yoghurt
-
1 large egg
-
1 tbsp vanilla extract
-
½ cup honey
-
⅔ cup milk of choice
-
2 cups of plain flour
-
1 tsp baking soda
-
1/2 tsp salt
-
¾ cup white choc chips
For the crunch topping:
-
½ cup brown sugar
-
1 tbsp pain flour
-
1 tbsp cinnamon
-
2 tbsp melted butter

Method:
-
Preheat the oven to 180 degrees. Grease a bread loaf tin and line with baking paper

Combine the sugar and cinnamon to make the cinnamon sugar
-
In a large bowl, mix the melted butter, honey, yoghurt, egg, vanilla and milk until well combined
-
Fold in the flour, baking soda and salt. Add in the white choc chips and stir until just combined
-
Spoon half the mixture into the prepared tin. Sprinkle with cinnamon sugar, leaving some for the top
-
Spoon over the remaining batter making sure it is evenly distributed. Sprinkle with remaining cinnamon sugar

To make the crunch, mix the melted butter with the sugar, flour and cinnamon until thick and pasty. Spoon this over the loaf in random dollops
-
Bake for 50-60 minutes or until the centre is firm

Enjoy warm or cool!
