Lunch Box Series: Stuffed Dates & Rice Paper Rolls

Welcome to our Lunch Box Series - a brand new recipe edit we’ll be releasing every fortnight. You’ll be able to find the visuals over on our instagram account @elaandearth, and all the details to our delicious recipes will be posted right here on the Journal!     

Upon the VERY exciting arrival of our Arlo Kids Collection, we thought it would be rather fitting for our first instalment to bring you along as we pack a day of school lunches using some of our new pieces.

We are super excited for this new series and hope to inspire you with fun, easy and healthy recipes to spruce up your lunchbox - whether for your mini, yourself or for the whole family to enjoy!

Stuffed Dates

Are you a fan of the iconic Snickers chocolate bar? Well, allow us to introduce you to a raw, healthy, moreish version.

This super simple recipe features juicy dates filled with peanut butter and covered in dark chocolate with a contrasting pinch of salt. These delicious dates will keep you sneaking into the fridge for, ‘just one more!’

If your school or workplace is nut-free, we encourage you to use Biscoff spread to replace the peanut butter for a simply delicious alternative!

Ingredients: 

  • 20 Medjool dates
  • 1 heaped Tbsp crunchy peanut butter 
  • Block of dark cooking chocolate
  • Handful of crushed peanuts
  • Sprinkle of Sea Salt

Method: 

  1. Slice date in half without cutting the whole way through. Take out the pit and discard.
  2. Using a butter knife, fill each date with 1/2 tsp (roughly) of peanut butter and gently press to close. Place filled dates on a lined baking tray or plate.
  3. Pop dates in the freezer for 10 mins or until firm. 
  4. Meanwhile, boil water on the stove and place a heatproof bowl over the top to melt the block of dark chocolate. Stir regularly until melted and smooth. 
  5. Grab dates from the freezer and dip into the melted chocolate using spoons. Let excess chocolate drip.
  6. Sprinkle crushed peanuts and cracked sea salt over the dates before the chocolate sets. 
  7. Pop the tray back in the freezer for 10 mins until the chocolate is firm.
  8. Store in the fridge and enjoy!

Speedy Rice Paper Rolls

Who doesn’t love rice paper rolls? Fresh, crispy and time efficient - the perfect lunch! Spare 10 minutes the afternoon before to prepare the veg and pull apart the BBQ chicken, to make this a super quick and speedy school or work lunch!

Ingredients:

  • BBQ chicken (rotisserie) shredded
  • 1 Avo sliced
  • 1 Carrot grated
  • 1 Cucumber cut into matchsticks
  • 1 Capsicum cut into matchsticks
  • Coriander sprigs
  • 2 rolls of Vermicelli
  • Packet of Rice paper wraps
  • Sesame seeds
  • ABC sauce or Hoisin

Method:

  1. Pull apart BBQ chicken (this can be prepared the day/night before). 
  2. Chop cucumber, capsicum, avo into matchsticks and grate the carrot (this can be prepared the day/night before). 
  3. Tear sprigs from the coriander. 
  4. Bring a pot to a gentle boil and pop in vermicelli until soft.
  5. Fill a large heat-proof bowl with warm water.
  6. Place one rice paper into the bowl of warm water for 5-10 seconds then lay the rice paper out flat.
  7. Place chicken, cucumber, avo, capsicum, carrot and coriander in the middle of the paper. Drizzle with desired sauce (we used hoisin).
  8. Fold in the sides of the paper, fold up the bottom and then roll to the top to form a spring roll shape.
