  • Chicken breast
  • ½ cup cooked quinoa
  • ½ red onion, finely chopped
  • ½ tin of corn
  • ½ cup of black beans
  • 1 tomato, chopped

  • Handful of coriander
  • Salt and pepper to taste

Toss cooked quinoa with the red onion, corn, black beans and tomato. Grill chicken and slice into strips. Add chicken to salad, and top with lime juice, coriander and salt and pepper to taste.
